About this place
Goma opens its doors at 7:00, serving brothless mazesoba noodles come midday.
The signature mazesoba is an intensely hearty choice for anyone craving a substantial bowl of noodles. Options packed with satisfying heft include the "Mashi-Mashi Mazesoba," topped generously with diced chashu pork and minced onion, and the decadent "Haitoku Mazesoba," which coats the noodles in cheese and rich pork back fat. The springy, thick flat noodles are tossed thoroughly to grab the sauce pooling at the bottom along with the toppings. Mid-meal, splashes of house niboshi dried-sardine vinegar or chili vinegar from the counter add layered acidity and umami, keeping the bowl dynamic down to the last bite.
Alongside the noodles, side dishes include rice bowls like the "Hana-Katsuo Don," topped with sweet-savory simmered meat, bonito flakes, and egg, as well as a house-made pork back fat chashu curry featuring shredded pork. Diners order cafeteria-style by writing their selections on a paper slip and handing it over, with service split across morning and lunchtime hours. Payment is cash only, and reservations are not accepted.
